The drying of the grapes in the sun before pressing and more than 30 years of aging in American oak barrels give our Pedro Ximénez its uniquely distinctive organoleptic characteristics: an intensely dark, dense mahogany colour, with a touch of iodine which demonstrates its age. Its rich aromas have strong hints of raisins, dates and honey whilst its background of roasted coffee beans with liquorice notes is characteristic of its age. It is velvety and oily in the mouth, with a well-balanced combination of bitter and sweet flavours, and persistent finish.
It is a wine with good body which is extremely rich in nuances.
Pedro Ximénez Urium can be consumed on its own as a dessert or after a meal, to give it a special finishing touch. It is the ideal drink to accompany desserts based on bitter chocolate, ice cream, and strong blue cheeses.
It must be served slightly chilled between 11° and 13° C.
